Fritters are a fantastic way to include more vegetables in your kids diet. In this version I have used a combination of cauliflower, cheddar cheese and chives for a delicious combination. The recipe is naturally free of gluten, and you could also leave out the cheese if you would prefer them to be dairy free. They make a great easy dinner served with dipping sauce, or can even be added to school lunchboxes!
Ingredients
1 cup cauliflower, diced into small pieces
2 cups of cooked rice or quinoa, cooled
a large handful of finely chopped chives
a large handful of of grated cheddar
1/2 cup of rice flour
½ tsp baking soda
3 free range eggs
Sea salt & pepper
Cover the cauliflower with water in a saucepan over medium heat. Bring to the boil, and simmer for 2-3 minutes until al dent. Drain immediately, and run under cold water to cool.
In a large mixing bowl, combine the cauliflower, rice or quinoa, eggs, chives, and cheddar. Stir in the rice flour and baking soda, and mix until well combined.
Place a large fry pan over medium heat and grease the pan with a little coconut oil, butter or olive oil. Drop the batter onto the pan using a large spoon. Grill each fritter until golden brown on both sides
Makes 12-14 fritters.
